ONLINE STORY: NAAN OF AURANGABAD

WHY IS THE NAAN FROM AURANGABAD SO FAMOUS?

Dating back to the Mughal era when Tughlaq shifted capital from Delhi to Daulatabad. The Naan of Aurangabad originates from that side and eaten along with Qaliya - yet another cherished and unique dish of the city. The naan coming in a yellow tear drop shape is made in many parts of the city and especially shops of these are found in the Katkat gate, Buddhi lane and Shah Bazar area.
The naan like the other naans is prepared in an earthen oven by the baker also called
the ‘bhatiyara.’ Combined ingredients of egg, semolina, milk are added to make the soft naan. A mixture of water and turmeric is added to the dough while baking hence giving it the yellow shade on top. Rahim bhai, a naan shop owner at katkat says that approximately 2000 naans are sold per say. The naan comes in three types- a normal naan, shahi naan and kulcha. People prefer the semolina naan(shahi naan) more.

The price of the naan varies from 6-10 rupees and customers prefer to buy naan and celebrate occasions and celebrations with Naan Qalia. This yellow tear drop shaped Naan is found only in the city of Aurangabad!
